Minor Video Recording and Editing

Will the i5-2500k along with the AMD Radeon 7970 work good enough for some minor video editing (i.e, videos under 15 min at 720p on youtube) or is the i7-2600k a must?

The i5-2500k should do the job perfectly, but if you want the best preformance possible and don't mind shelling out an extra $100, get the i7-2600k

the i5 and 7970 is overkill for that.

a cheap $500 system can do that.

I am gonna game too. I cannot spend the extra cash as I'm already maxed out when I add water cooling.

The i5 is perfectly fine for gaming if you're going to use water cooling
