Budget build with upgrade possibilities

Hey all

I'm looking to try and get a new build going but I have a few questions. I'm trying to stick between a $500-700 budget, but I want to leave it open to easily upgrade it in the future. I was thinking about going with the i5 2500k CPU, and a mobo to allow for SLI or Crossfire in the future. Main purpose is for average gaming, nothing too high end yet (although I kind of want to get Skyrim for PC when it comes out). I just am not sure if I can get a decent i5 build that's playable now on medium to high ranges for my budget. Here's some info:

Approximate Purchase Date: End of the year (hoping on Christmas for some of the parts)

Budget Range: $5-700 After Rebates

System Usage from Most to Least Important: Gaming, photo editing, surfing

Parts Not Required: Monitor, Keyboard, mouse, anything that's not in the tower

Preferred Website(s) for Parts:Whoever has the best deals!

Parts Preferences: Would like to try for the i5 as I think it might have a longer life if I continue to upgrade components around it

Overclocking: Probably - would be my first time trying to OC

SLI or Crossfire: In the future

Monitor Resolution: 1920x1080

Additional Comments: Looking for a case with good airflow. I've had 3 liquid cooling systems in my current computer (done by CyberpowerPC) that crapped out on me. I'm not too trusting with liquid cooling anymore.
