What is universal shader and why does the HD 6950 have so much more of it than a GTX 580? Thanks

A "universal shader" is the general purpose processing core in a graphics card.

nVidia cards have more complicated shaders that accomplish more at a time so they end up with fewer on a chip, AMD cards have simpler shaders and have a lot more of them to get the same processing power.
