Okay, after months of research I finally came up with the rig I want.
Budget: $2600
CPU: Intel core i5 2500k

Graphics: SLI GTX 580s EVGA classified (when it's released) I know this is overkill for one monitor, but I want to be able to play games as long as possible without having to upgrade.

^ none of these parts have been bought. So far, I've spent $380 on these parts (happy with all of them)
2x Hitachi 1.5 TB HDDs (sata 6.0 gpbs, 7.2k rpm, 64 mb cache, will probably put them in raid 0)
NZXT phantom ATX full tower white
Logitech g500 gaming mouse
Logitech g510 gaming keyboard
Asus dvd/cd burner
Probably my budget will be cloer to $2700, maybe $2800, but I said $2600 just to be safe.
Also, should I get an SSD? Just a small one is all I'd want to do; like 64 GB for OS and a game or two.

If you get SLI 580's, the total power for the cpu and gpu's is roughly 680W. So, through in 2 HDD's, a Blu-Ray/CD-DVD drive combo, and the minute fan/accessories you have, 910W is enough, but still cutting it close in my book. Remember, headroom will save your psu for longer life, and cause less problems if say, there was a power surge or something of that nature that wasn't your computer's fault. Also, psu's tend to run a little better/more efficient when there is some room from max power consumption on it. This is wattage for 100% load on all 3 of those chipsets.

590's do tend to run hot, so if that is an issue, the GTX580's are the way to go. You will have a great experience with those two. The 6990's are a great gpu as well, and...

Witht at budget, go with a GTX590 if you can find one. It is better to go heavier with 1 gpu than to go SLI. There are still bugs with micro-stuttering, and quite frankly, the GTX590 is all you need right now. seriously. Samsung has a 27" monitor with a 1ms response time for around $300. Great monitor for gaming! As far as the SSD goes, the only one i recommend is the Crucial M4 128GB. This is big enough to save everything on at least originally, and then transfer to HDD's as needed. Honestly though, i dont think they are worth the money. I would rather see you buy 2 more HDD's, get the storage space, and RAID0 them together for increased performance. I think you would see the same performance from 2-3 HDD's at 7200-10000 rpm's as you would with an overpriced SSD. There is still some ground to make up with SSD, and unless you really have a ton of money you dont care about throwing away, or the professional need to use ssd, it is not really worth it for normal consumers.
Your PSU is good, but 1000W is recommended for SLI GTX580's, and especially if you are going with GTX590's (highly recommended). I like the Corsair AX1200. Retails around $280. Very dependable, and can handle anything out there.

I've heard the 590 has heating issues and has a low overclock potential. Anyway, the 6990 outperforms by just a little. I've seen that monitor, also considered it, but I'm not sure I'll see a difference between 1, 2, and 3 ms as far as a response time goes. Yeah, I'm not so keen on an ssd, just sexy boot and load times hehe :)
And actually, I've read many places a good 850W PSU will be fine for sli 580s. And the psu I linked can do 1kw. But none the less, thanks for taking the time to respond; I'll take your advice into consideration.

P.S. - keep in mind this $2700 I have is going into nothing but this computer, so I'm not trying to save money.

If money that is saved for this is going to be spent, then get the SSD. Crucial M4!!! 128Gb drive will hold your OS, and most of your prized applications. You can send over files from downloads/installs that you dont use with a transfer, as that will be faster than a direct DL/install to a mechanical drive. I will use that setup later on when i purchase my SSD.

Well the psu can put out a 1000W. A friend of mine recommended it to me- he has it. And it's just a cd/dvd drive, no blu-ray. But a power surge is something I'd surely like to avoid. What psu WOULD you suggest? (not corsair's beast ax1200- it's nearly $300 lol)
Yeah, SSDs are rather sexy. I was thinking getting two 64 GB and putting them in Raid 0. Not sure. I'll check out the one you mentioned, though. I think I might start with one monitor and get more in the future? I'm not sure. Still very indecisive about my display(s).
