How easy is it to replace the GPU cooling system?

I have seen a number of GPU's that I think would fit my bill but quite a few of them only have a single fan and as Zalman and others also sell GPU coolers, I was wondering if maybe buying one of the regular-clocked cards and replacing the cooler so I run up the speed might be advantageous.

What problems might I encounter?

Is the power outlet (and power availability) on the card generally compatible with aftermarket coolers?

Will I run into control issues with the fan system and GPU / OS software?

Solution
Back in the day, it was worthwhile, today I'm not seeing it. The factory OC'd models w/ the larger coolers can be pushed higher ..... and chip cooling does not appear to be the limiting factor.
