Single 590 or SLI 570/580

Hi!
I want to do nVidia 3d surround vision.
I'm asking if I can do it with a single 3 dvi ports GTX 590 (probably from
Asus). If i can't, would SLI matrix gtx 580 (still asus) be overkill? if
so, then i'll go with SLI gtx 570. Is there a big difference between SLI 570/580, knowing CPU limits?
Also, my board can support 3-way SLI. Would 3-way gtx 5xx be better than SLI 570/580?

SLI 580s for sure, it will be faster than a single 590 gtx because its running on two PCIE buses instead of one.
