Hi, want to build a new Mini-ITX system but I don't know if my motherboard supports my RAM speed...

Motherboard: ASUS P8Z77-I DELUXE
RAM: G.SKILL Ripjaws X Series 16GB (2 x 8GB) 2133.

On the mobo page it says 2133 (O.C). Will it work even though it is stock 2133 or do I have to buy 1333/1600 and then O.C. it?

Your board will support that speed but you will have to OC to achieve it. All RAM comes with stock speeds of 1333.

2133 is an oc speed and the max speed the ram was rated at. 1333/1600 is the stock speed of the mobo/cpu and is what the ram will probably default to. You will have to set the ram to it's higher speed or load the xmp. Ram always has lower speed profiles for compatibility.
