Does anyone know what bios version comes with the ASRock Z77 Extreme6 out of box?

Depends on which box you got... Not all of them ship identically. Ones manufactured earlier have earlier BIOS versions. Ones that come later, have later ones.

Just boot it up, and go into the BIOS, it will show which version it has.

Do you know if I'll have to update the motherboard to use an i7 3770k ivy bridge CPU 3.5 ghz

No, it's a z77 mobo, it was made for 3rd generation intel cpus(ivybridge) like the one you have.
The default bios already supports any ivybridge and sandybridge cpu.
