mostly insane

no point in spending for motherboard features you will never use .
SLI . for instance , will never be required
Worse still socket 1366 is a dead end platform . IMO you are better off with a socket 1155 2600k which will perform slightly worse out of the box and then adding a cooler and overclocking it to the 4.6 - 4.8 GHz range if you need the speed .
A Z68 chipset mb

no point in using a high end gaming card for video editing
Even for encoding this would be a bad call . Get a quaddro , and if its just editing make it midrange

pointless use of two SSD's
You want rapid access then use a single OCZ revodrive 2

Spend more on lower latency RAM
