When I search for files (such as clicking "File/Open" )in
almost any windows program, my prefered mode is to go to
"Details" - to see a file list that includes names, sizes,
and dates - and then to sort it by date - most recent on
top. I could save dozens or hundreds of 'clicks' a day if
I could set Details, sorted by date, as a default for file
browsing for all programs running under XP. Is there a way
to do this? It sure seems like there ought to be.

No there isn't. The only thing changable is sort.
