Upgrading GFX Card (After a Mobo/CPU upgrade)

Currently upgrading to a 2500k Sandy Bridge CPU (Or Ivy Bridge, depending on the next few weeks) and a Asus Maximus IV Extreme. Along with Patriot Viper Xtreme 16GB (4 x 4GB) 240-Pin DDR3 SDRAM DDR3 1866 (PC3 15000). I'll be getting a 120GB OCZ Agility 3 MLC SSD.

Currently I have an ATI 6870, but I really want to switch over to nvidia, as I hear great things. I'm thinking of picking a 570 (2560MB version) or should I Just buy another 6870 (1GB Model) and crossfire them? Or should I get a GTX 580?

Thoughts everyone on the card?

This upgrade will mainly be for The Elder Scrolls V: Skyrim, and a bit for Battlefield 3, and Call of Duty: Modern Warfare 3.

I use a single monitor @ 1920x1080 resolution.

The 6870 alone will give me ulra/very high settings on Skyrim, but after people start releasing high-resolution texture packs I want to remain at a maxxed out setting.

Getting the cash for all of these upgrades will take anywhere from 1-4 months, and I understand in that time, Ivy Bridge, AMD 7000, and GTX 600 series all may be released. I will adjust my plans accordingly, but as of right now i need to know what I am planning for.

6950 2 GB (CrossFire) is my suggestion. Obviously you should wait for benchmarks before buying.
