Alright. I currently have the below rig set up in PCPartPicker.com. I'm using their site in order to get an idea of what I need and get an accurate, current price of the parts and the total cost of the rig. My thing is, I have a feeling that the rig I have selected now is a bit over-powering for the current market of games and will end up leaving me with less money for the future in order to upgrade, etc. Below the rig specs will be my questions.

I will be using this rig for both gaming and graphic/video editing. So with that said, the 2600K is almost a guaranteed stay as well as the 3-monitor setup for ultimate multi-tasking.
Questions
1. First off, is this rig over-powered for the current market?
2. Would it be smarter to run Dual 570 SLI intead of Triple 580 SLI?
3. If so, what would you recommend as far as a motherboard, memory, and power supply?
4. What would be a better case as far as rig stability? (Current case has a top mounted PSU bay)
Anything I left out, please fill in the blanks for me. I am honestly look for a high-powered rig for as affordable as I can get it. I currently have a $5000 budget, but honestly, if I could save money for future upgrades, I would like to. I would also like to stick with top-of-the-line brand items, minus the mouse and keyboard. I am also looking to save money in places where I can possible upgrade my HDD and SSD to something a bit more powerful/more space.
