I'm looking for something that will run on my rig without my CPU/RAM bottleneck'ing it.

The OS will be upgraded to 64-bit very soon.

I'm thinking 5770/5850/6790/6850

If you have extended your budged to the 6850, may as well get that. That CPU is not a bad one, and you have enough RAM so that the video card won't be stuck waiting for data from the system. Even if the video card can run better with a faster CPU in some games, it will not be a waste, if you ever feel like upgrading, move the card over to the new system. Although I don't see you seeing any issues with your setup at all.
