For monitors I'd like to reccomend the Dell Utrasharp U2412m for your eyefinity setup. I personally own 3 of these and am well beyond satisfied. Basically the 12m has everything I need in an eyefinity setup:
16:10 resolution vs 16:9 (1920x1200 vs 1920x1080)
Height, pivot, tilt, and portrait mode
Native DisplayPort input
IPS type panel (for increased viewing angles vs TN panels)
Only down side is that it didn't have an HDMI input, but I later used a DVI to HDMI adapter for my Xbox and that works perfectly fine.

The 12m can be found for $350 each (normally $400 but Dell has had them on sale for around $40-80 off for months on end). That would cost you $1050 which for your budget range is a little too high. Here is the unfortunate catch. Dell has a deal where you buy a $400 gift card get a $75 card free. IF you can find 3 friends or family to buy that $400 gift card off you, you will pocket a cool $75 bucks and essentially make the 12m cost only $275 a pop ($825 + tax and recycle fee for 3). Considering a normal TN 1080 screen is about ~$180 and dose not have any of the above features, for a $95 (+ your time in finding buyers) upgrade is a steal to me, if you can pull it off. Good luck! (I had to deal with $500 gift cards several months ago :( )

I mean I'm not only going to play wow but when new games come out I might try them like I wanna try counter strike global offensive when it comes out but I'm mostly going to be playing wow for the majority of the time

2 monitors will plug into the dvi ports in the gpu and one will have the adapter into the display port then a dvi into the monitor

i personally think the HAF X is hideous and it lacks fan filters so it should not even be considered. Fan filters are a necessity in my eyes. the df-85 also cools better than the HAF X according to Bit tech

The zalman cpu cooler is overpriced considering it does not cool as well as this cpu cooler- http://www.newegg.com/Product/Product.aspx?Item=N82E16835608018&Tpk=noctua%20nh-d14 this is the best air cooler on the market. you can add that to the build i posted above. the scythe mugen 3 can handle oc's up to 5ghz so it is probably more than enough for your needs

he didnt post speakers or a dp to dvi adapter so add that to his build that is already over your budget

the motherboard i posted is a 12+4 phase board his is a 8+4 phase board. the more the phases the better it overclocks

the vengeance ram will be difficult with the bigger cpu coolers. low profile ram is needed so it doesnt hit the cpu cooler.

The sandforce ssd's are a little buggy. i usually recommend the crucial m4 but the faster plextor just came out. Plextor and crucial makes very reliable ssd's.

the gold rated psu will save you money because it is more efficient. also it is modular which is a plus.
