I'm not really an expert on these kinds of builds, but I do know a few things...

You may want to contact the companies for the software you use to see what the best GPU setup is. From what I understand once you reach a certain number of CUDA cores, it doesn't matter if you add more. So I don't know how much benefit you'll get from SLI/Crossfire. However, I don't know for sure since I don't use those kinds of programs.

Also, do not buy a consumer grade graphics card if your primary use is business. While the cards may be physically the same, the Quadro and FireGL (or whatever AMD calls them) cards have better driver and tech support for productivity programs like AutoCAD. The consumer cards might work on those programs, but they are really for playing video games. If 3D modeling was a hobby on the side and you played games, then a GTX or Radeon might be the more appropriate choice. You can game on a Quadro or FireGL if you want to play games on your business computer.

I'm also not familiar with how the Quadro and FireGL cards stack up. I know the GTX and Radeon lines since I don't use graphics cards for business use (except at work where they buy the PCs :D)

The i7-3930K is definitely the fastest consumer CPU available. For business use it makes sense to get it until the Xeon version is out. I know they are coming out with the xeon version soon which will have 8 cores if that is more up your alley, but I'm not sure how far away it is.

The PSU is overkill. A single GTX580 only needs a 600W PSU. Even with 2xGTX580's you don't need 1200W, since combined they'll only draw 500W. Add on the CPU, and other components and you could possibly fit everything on a 750W PSU. With SLI a 850-950W is more appropriate (and cheaper).
