Hey folks, building a new computer next week and saw the NewEgg deal on memory:

CORSAIR Vengeance 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800) Desktop Memory Model CMZ8GX3M2A1600C9

I was planning on getting this, but I don't think I'm going to overclock anyway (seems like a pain in the butt):

G.SKILL Ripjaws X Series 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 2133 (PC3 17000) Desktop Memory Model F3-17000CL11D-8GBXL

This seem like it'll work out ok to get the Corsair sticks instead of the GSkill?

Just get the CORSAIR. You wouldn't possibly find a difference in performance between the 1600 Mhz and 2133 Mhz.
