Hello,
I currently own;
- i7 920 @ 2.67ghz

-12 gigs of triple ddr pc3-10700 memory (7-7-7-20 @ 530mhz)

-gtx 260 1792mb core @ 518mhz shaders/mem @ 1008mhz

-Motherboard is an AMI x58 (ICH10R southbridge)

-Running windows 7 ultimate x64.

I'm looking to upgrade my rig for better after effects performance (I also play the occasional game, mostly FPS). I find it difficult deciding on a crossfire HD6950 x 2 addition (which will require a new mobo/PSU), or a gtx 580. which of these two would perform better in the adobe suite? Also, any other recommendations for a better editing rig (most in after effects).

Nvidia is the way to go with the Adobe Suite. Open64 compiler ftw! A pair of 560ti's would be great for what you are doing. Your system is rockin as it is, are you currently having issues rendering vids?

if you mostly work with animation and video editing, rendering and 3D work you should get a ATI FirePro or nVidia Quadro GPU, anyway 2 HD 6950s performs better than a GTX 580, AMD 6K series scales better than nVidia's.
also a couple of GTX 560ti would be a good choice
