WinXP. How do I remove the integrated programs??

I've been using Windows XP Pro for some time now and, for the most part, I love it. My biggest problem is with Microsoft gool ol' integration policy. When I installed XP, I was given fewer install options than any previous MS OS. Needless to say, there is now a lot of useless junk on my PC that I don't want or need.

My biggest beef is with "Windows Picture and Fax Viewer". Everytime I double-click a picture, it opens up with that program. In order to open it with my real editing program, I have to right click the file and hit "open". I tried adjusting the jpg/jpeg/gif/etc. extension associations, but none of the extensions list "Windows Picture and Fax Viewer" as a command. What I'm saying is that I can't find a way to associate my editing program as the default open command and, more importantly, I can't find find any option to remove this annoying program!!!!

What gives? Are there any tools or programs out there to remove excess garbage from XP? I just want to be given program options, options that should have been there in the first place! *THANKS TO ALL WHO REPLY*
