For AMD, I am interested in the Sabertooth Mobo.

OS is fine, as is the Monitor. HDD can be picked out after as well.

Please tell me what you think and give some recommendations and I am completely open to changing things or everything. My budget is Roughly 1200 (A little lee way)

Ram - get a 8 GB DDR3 1600 Mhz CAS 9 1.5V and put the extra money into video card/mobo
Get this: Corsair Vengeance 8 GB DDR3 1600 Mhz CAS 9 1.5 V for much less http://www.ncix.ca/products/?sku=58955&vpn=CMZ4GX3M2A1600C9&manufacture=Corsair

PSU - The XFX you choose is ok, but its not modular, I would go with a better brand like Corsair AX or OCZ ZX, and if you dont plan on SLI/CF, get a good brand 650W PSU

CPU - i5 2500k looks fine

Cooler - fine

GPU - Depend on which game you play, GTX 570 or HD 6970 is pretty much equivalent in performance. Some games do favor 1 over the other, so make sure you know which games you play before making a decision.

Mobo- If no SLI/CF plan: Asus Maximus IV GeneZ is fine
if SLI/CF : Asus P8Z68V-Pro/Gen 3 is a better choice over the P67 Sabertooth/Asrock
