Solution
That's a hefty price for a cable, make sure the mobo or video cards don't come with one.

I would probably upgrade to motherboard to Asus/MSI/Gigabyte model which has SLI/Crossfire support and PCIe Gen3
MSI Z68A-GD65 G3, Asus P8Z68-V (or PRO) Gen3. You will get better and more stable overclocking results, they will cost a bit though.
Or even Asrock Z68 Extreme 4 Gen3 ~$180, as the Asus boards at least are in the $240 range.

As for the SSD I would highly recommend looking at current generation SSD's OCZ Agility 3, OCZ Vertex 3, Crucial M4, Samsung 830. They utilize the SataIII bus and are considerably faster that the one you have listed. Obviously the downside again is price, so they are probably more expensive as well. ( $200-250 )...

Possibilites how to get the above: leave out the crossfire bridge, downgrade graphics to a single GTX560Ti Gigabyte or Asus ~$260

Then you can get a 2nd 560Ti if you run out of juice later. Should still game just fine at 1920x1080 with high settings.

All solid advice there from @rvilkman.

One suggestion I would make however is look at PSU's from Antec, Corsair, XFX or SeaSonic. They are generally considered the "best quality" brands. 750w unit will be plenty for SLI GTX 560Ti's should you take rvilkman's advice and chose to go that route.
