Which one is better? the asus sabertooth ultimate x79 or the Gigabyte GA-Z77X-UP7.

Between those two, the Sabertooth all the way. Gigabytes great but if a sabertooth is in your budget go for it.

I hope you are aware that those are two different platforms, X79 versus Z77. X79 is Core i7 ONLY whilst Z77 is Core i3, Core i5 and Core i7 - CAUTION: the X79 Core i7 processors are not compatible with the Z77 Core i7 processors (viceversa).

For the Sandy Brigde-E X79 LGA 2011 platform, there is a selection of four processors: i7 3820 ($300); i7 3930K ($570); i7 3960X ($1,070); i7 3970X ($1,080). These processors will run on the Asus Sabertooth X79.

BUT the Z77 Ivy Bridge LGA 1155 also has a Sabertooth model, the Asus Sabertooth Z77, which will run the i7 3770 ($300) and i7 3770K ($330).
NOTE: Z77 chipset is also compatible with Second Generation i7 Sandy Bridge processors such as the i7 2600 ($315) , i7 2600K ($320) and i7 2700K (prices $310).

If it is just gaming and streaming videos, build around the Z77 platform with an i5. For gaming, the decision between i5 and i7 is a "NEED" versus "WANT" situation.

There's probably no need to spend this much unless you expect to use more than two graphics cards in SLI/Crossfire. A $200 motherboard (eg. Asus P8Z77-V PRO) and a Core i5-3570k is going to do more than well for a gaming system.
