GTX 560Ti. As for memory, have a read through this rather interesting article. I think in 100% of cases at 1920x1080, having 2GB GPU memory, gave absolutely zero advantage over 1GB memory. The 2GB reference card was bottom of each benchmark test. Even pushing up to 2560x1600 - the 2GB memory didn't even seem to have any impact.

I think those fans is not good for heat dissipation. I suggest to buy gigabyte 560Ti for his two big and quiet fans.

Out of personal preference i'd have the 6950; but as mentioned above i'd get the 1Gb due to the ram advantage not really making a difference. unless you do a lot of video transcoding. the 560Ti might be worth using if you play a lot of physX based games; although i've only seen it used well in Batman Arkham asylum. either way you can get a cheaper 6950 that would still match the 560Ti.
The AMD Radeon 6950 is faster than the GTX 560 Ti. higher core clock DOES NOT necessarily mean that the card will be faster. For example the GTX 580 only has a 770 MHz core clock and it trumps the higher clocked 6950 and 560 Ti.
However, I would choose the GTX 560 Ti out of those to as I think EVGA is better quality than Sapphire. If you can find the 6950 in GIGABYTE or ASUS brands (which are available) then those would be better.
OH AND ^^ BOTH CARDS HAVE GDDR5.
Take a look at this GIGABYTE: Its an excellent buy at the moment: http://www.amazon.com/GIGABYTE-Radeon-DisplayPort-PCI-Express-GV-R695OC-1GD/dp/B0056GJL26/ref=sr_1_8?s=electronics&ie=UTF8&qid=1319189555&sr=1-8

That CrapperMaster "500W" PSU is overrated and inefficient. I would not trust it to power either of those cards, at least not for long. A true 500W PSU like an Antec Earthwatts or Corsair Builder would be much better choices. Because so many CM PSUs have liar labels, I would not buy ANY CM product so as not to support a dishonest company. Fortunately, in every market they've entered, they have competitors with similar products at similar prices. For example, check out Rosewill cases.
Your CPU is also a little weak, and will bottleneck either card. If your budget allows, you might want to improve that CPU.
If one of your intended games is Rage, be aware that it uses CUDA on an nVidia card to decompress textures, so choose the GTX560Ti.

You might drop back to a GTX560 or HD6870 then. There's really no point in getting anything more powerful, unless or until you upgrade the CPU. Even those might not reach their full potential with your current CPU, although that looks like a nice OC.il probly just turn the ingame grapghics (like phisics and game effects)be cuz i cant aford a new cpu
Let's compare the factory overclocked versions of each:
Guru3D uses the following games in their test suite, COD-MW, Bad Company 2, Dirt 2, Far Cry 2, Metro 2033, Dawn of Discovery, Crysis Warhead. Total fps (summing fps in each game @ 1920 x 1200) for the various options in parenthesis (single card / SL or CF) are tabulated below along with their cost in dollars per frame single card - CF or SLI:
$ 260.00 6950 Frozr OC (484/759) $ 0.54 - $ 0.69
$ 205.00 560 Ti - 900 Mhz (495/862) $ 0.41 - $ 0.48
Kinda close as a single card, (494 to 484) but when ya pair em up, it's no contest (862 to 759).
