I'm going to get straight to the point.
What's the best version of the GTX 570?

Will these cards fit in a SLi formation on a MSI Z68A-GD80 Gen 3 board? http://www.pccasegear.com/index.php?main_page=product_info&products_id=18385
Only running a maximum of a 2 way SLi! Also i will be overclocking the GPU.

They are reference cards, they will run hotter that the ones he suggested, Also the PSU he chose is a great one.
 

Asus Direct CU II is great but it takes 3 slots, and this is really a big problem.
The phantom has great reviews, i recommend it btw. or you can still go for a Gigabyte or MSI ones.
PSU is okay.

Even on a large board like a MSIZ68A-GD80 G3? Could 2 possibly fit? I want to overclock the card so needs good cooling, hence me choosing the Gainward / Asus. Only thing is the Gainward is almost 3 slots too! AND, AND the Asus has a 3 year warranty......
Evga i wouldn't touch, no room for overclocking, reference card, average cooling ect. ALSO I'm in Australia, no life time warranty here bud. Also the card isn't "Superclocked"
 
Both cards will take 6 slots, you see if it will fit or not in your case, but you wouldn't have a place for anything to hook in PCI slots.
Also, the space between cards will be too narrow, and you'll get a heat problems.
Gainward is 2 slots not 3, And as i told you the Gigabyte and MSI are good ones too, great for overclocking.
The gigabyte has 3 fans which makes it cooler and silent....
