I would reccommend a 6870 over a 6950 due to the price/performance ratio you get an 10-11% performance difference from a 6870 to a 6950 but you spend 28% more on the videocard especially if you're getting the 2gb and your resolution doesn't need 2 GB of vram also I reccommend the Intel Core I5-2500k
 
Being a SWTOR player myself, I would stick with the 6950. It may just be a bug but many machines are struggling with shadows currently. I consider my overclocked 5870 to be about minimum.

If you are going to get a crossfire/SLI board you should get a PSU to match. I thought the 6950 and 650TX were a good match.

If you can swing Casey10's suggestions on the CPU RAM and MB and stay with the GPU and PSU, I think it would be ideal. If you need to save some money, then I would go with an AMD 970 chipset and Phenom II X4 955. Then get a good cooler and overclock it a bit.
