This is my final build for my mid price computer...

 Intel i5 250k

MotherBoard: 
Gigabyte GA-Z68X-UD3HB3

GPU: 
Gigabyte Radeon HD6870 1GB $
                         OR
Gigabyte Radeon HD6950 1GB $$

Case: 
CoolMaster StormEnforcer

RAM: 
Corsair 4GB Dominator 2x 2GB $
                        OR
Corsair 8GB Dominator 2x 4GB $$

PSU: 
Antec HSG-520                    $
                       OR
Corsair CMPSU-750HX.       $$

HDD:
Western Digital 1TB Caviar Blue 

The $ signs show a cheaper or more expensive option depending on the budget.
Happy to have any thoughts on possible improvements.

The 6870 is a better price/performance deal. Here's a 6870 with a couple free games on sale until 12/31:

I'd go for 8GB of Ram.

The two power supplies you've selected are wildly different, so it's hard to compare. Are you looking to xfire in the future? Here's a good website for PSU reviews:

If you're planning to add another 6870 in the future (go 6870), take the 750W. If not, go with this one: http://www.newegg.com/Product/Product.aspx?Item=N82E16817371035&Tpk=earthwatts%20500
Yeah, 8gb wouldn't hurt. It's not a big price difference. If you're worried about $20, get a cheaper case.

I might go with the better PSU to future proof it for extra video cards etc.
