So I know that Sabertooth is more expensive, but I'm wondering if it is worth the extra money over P8Z77-V Pro, I mean do you see a drastic performance difference between them to warrant the premium price Sabertooth charges or is it just about extra bells and whistles?

P8Z77-V Pro has everything I really need, but I intend to use it for the long haul (5+ years), so if Sabertooth has clear performance gains over it, I wouldn't mind spending the extra $40 on it.

I intend to do some mild overclocking with my Core i7-3770K but nothing crazy, I will use the system for both gaming and video editing stuff.

Any feedback from someone who has actual experience with both boards would be great, thanks.

Both are very good MOBO's so the choice all depends on your needs and period of time you plan on keeping LGA 1155. If you update or rebuild frequently then the P8Z77-V Pro or P8Z77-V otherwise the Sabertooth Z77 for long-term and IMHO heavier use (active cooling/fan chipset and VRM).
