Hello,
I have an old gigabyte 81875 motherboard and was wondering what size of sata HDD it would support. I would like to install a 3 TB HDD. Also I have Acronis True Image 10 software so if I partition the new drive would the Motherboard see 3 drives or still just the 3Tb HDD

SATAs are pretty much backwards compatible (will run at slower speeds if previous gen plugged in, but will still run just as fine...as long as it's SATA and not IDE/SAS or something else, lol).
But you won't be able to use 3+TB HDDs on an old OS. Only OSes like "Windows 7 Professional 64 Bit" and up, can support HDDs with storage capacities more than 2TB.
So, as you can pretty much get the picture now, it's not about hardware, but rather about software that you use. If OS supports 3+TB HDDs, then you'll be able to use it just fine.
