You can search for games that apparently can use the Multitap. I cannot
vouch for how accurate the list is, but it does have James Bond 007:
Everything or Nothing, which I know has a 4-player mode.
The game details also describe the potential number of players, though I
notice that it's not accurate for the aforementioned title.

Most of the EA sports titles can be played with up to 8 players.
FIFA is probably the most fun to play with multi-players, followed by
NBA Live.

You could try out the Medal of Honor series. I've played Medal of Honor European Assault and MOH Vanguard. You could also check out Red Dead Revolver, its a really good, addictive game!
