New system Build

Hello,
I am building a new Quad core system and I am wondering what would give me better performance. 1 Nvidia Gforce GTX 560TI 2gb or 2 Nvidia Gforce GTX 550TI 1 GB each,below is the build i am currently working on

Case: Undecided
CPU Fan: Undecided
CPU: Intel i7-2600k 3.4 ghz
Motherboard: Asus P8Z68 Pro
RAM: Corsair Vengence 8GB DDR 3 16800mhz
Monitor:27 HDMI (brand not decided yet)
Primary HDD:Seagate 1.5 TB
Optical drive - DVD+R/RW CD+R/RW
PSU: Corsair 850Watts 80 Plus Bronze Cert
O/S Windows 7 64Bit

Is this a gaming rig? If so i5-2500K will do - don't forget the cooler - you will want to overclock it. I would go with the GTX560Ti - you can add another later if need be. Also go with SSD and add HDD later when prices drop.
