I am currently considering buying a Sapphire 6850 (link at bottom)

I want to use a 3 monitor eyefinity setup. I currently own a ViewSonic monitor (link at bottom) and will probably buy another one to use as the far left and far right monitor.

Now I need your help. I need to select a monitor to put in the middle (compatible inputs, resolution, and looks nice when gaming next to the other two Viewsonics) and make sure that these will all be compatible before I place a $500 order from Newegg.

Thanks!!!

I wouldn't recommend 6850 for eyefinity, doesn't have the v-ram you'll need - start with a 6950 2gb for eyefinity, add a second one when you feel you need it in the future. 6850 is good for single monitor @ 1080p, but not 3 monitors (I just sold my 6870)
Sorry this doesn't answer your monitor question, but should help with your card selection. The 560ti 2gb would be good as well, but you need two Nvidia cards to do their surround vision (similar to eyefinity).
