Upgrading from a Core 2 Duo E8200

I would like to spend ~250 for a new processor, and i'm wondering if I should get an Ivy Bridge processor now that they're out? or just grab an i5 2500k? Also, I don't really overclock much.

You would need to define how much is "not much" for you. If that means something like 10%, IB would be just as good with likely lower power.

I personally wouldn't bother paying the ~$50 premium for a K-chip (i5-3570K vs i5-3470) unless I planned to try my luck with a significant overclock, say 20% and up.

For those upgrading from pre-SB an IVB chip would be the good choice.
