In most tasks the i3-2100 will be the fastest. However, depending on your use or price constraint you may want to use a cheaper chip (AMD or Intel).

With the AMD CPU you'll need an AM2+/AM3/AM3+ board.
With the i3-2100, you'll need an H61/H67/P67/Z68 board.
With the i3-540 you'll need an H55/P55 board.

SO-DIMMs are laptop RAM. You want desktop SDRAM (240 pin) unless your motherboard specifically uses SO-DIMMs (very rare, but not uncommon for MiniITX size boards).

Not much to do about the GPUs. I don't think you'll notice a big difference between the 440 and 430, so you may as well go with the 430 1GB to save money.

GT430 1gb and GT430 2gb has a little difference on price $8 to $10 last time i check... i wonder why there's a 1gb difference for a low price...
sorry i don't have enough knowledge on these kind of stuff...

amd apu is a nice choice even without a graphics card as their built in graphics is good enough and i doubt you would be putting metro2033 or bf3 there,

people normally play these

warcraft III tft
sf
point blank
ran
cabal
hon
lol

and many of those e-point games or something

these games doesn't require much from graphics so a good apu system is going to be good enough for your pc and maybe you can add in cheap gpu

Although this topic is a couple months old could I make a suggestion for you to use 18.5" 1366x768 resolution monitors opposed to (rare to find for me anymore) 19" 1440x900 monitors?

Websites still fit comfortably, Games will run a little smoother by having to render 240000 less pixels, and its closer to 720p so HD videos still look crisp.

I'll also +1 to Travo_Nova's suggestion to go with an AMD APU.
It'll also be "greener" than an i3 + GT430 = less electricity bills for your Café :p
