Your budget is rather "unnecessary". Spend >$2k and save the other $3k for a car or something useful when you finish school
SB CPU's currently pack plenty of power, and I can't see Ivybridge providing all that much advantage, especially for gaming. 2500k/2600k can push clock speeds of 4.5GHz+ which is more than enough and aren't even close to bottle-necking GPU's.
My suggested build would be something along the lines of:
SLI/CF ready Z68 motherboard - ASUS P8Z68-v PRO/Extreme4 Gen3 or similar
ATI 7970 GPU - you can add a second card later if more performance is required
850w PSU - Corsair, XFX, SeaSonic or Antec recommended
120GB/124GB SSD
7200RPM HDD - As many TB as you require
Case - of your choice - most Mid/Full tower ATX will be fine
8GB 1600MHz RAM - Dual Channel DDR3 1.5v CL8/CL9
i5-2500k/i7-2600k - You need to decide if hyper threading is worth paying out the extra $100 for. Wont help with gaming, but will with video editing.
