Help!!! Many questions about gaming pc build

Alright so I am going to build a entrie new system. Here is what I currently have:
Case: NZXT Tempest EVO, CPU: AMD Athlon II 620, Cooler: Asetek Liquid cooling, Mobo: Asus M4A785-M, GPU: Palit GTS 250, Ram: 6gb DDR2 800mhz, PSU: Xion Super Nova 700W ?(never heard of this brand), HDDD: 1TB WD 7200RPM and 320GB Hitachi. Brought from iBuypower.
Now my plan is build a completely new system with water cooling on cpu, chipset and gpu(s), but use the same HDD's and two lightscribe drives I have. Here is what I am thinking of getting:

Case: Corsair 800d (will mod for bottom dual rad)

Mobo: ASUS Maximus IV Extreme-Z

RAM: Corsair Vengeance 16GB

PSU: Corsair AX1200 (maybe overkill, but all depends on GPU(s)

GPU: 590 maybe?

I will water cool the CPU, chipset, and gpu(s). I would like to model cooling system after Digital Storm TEC system but without the TEC. Would buy their system but do not have the money right now. Now onto the questions.

1. Is this cpu good enough for gaming, and video rendering? I am a heavy Adobe CS5 user.
2. Is the 590 gtx a good video card? Does it match two 580's in SLI? If not can I overclock the 590 to match two 580's? Do you recommend a different one? I did not leave ATI out of the equation.
3. Is there an ATI that is better. Also what does ATI have to compare to physX and Nvidia's 3d vision,? if they have anything similar.
3. Does anyone make a mobo for the 1155 socket, that has 2 PCI-e slot at x16, to run sli?
4. If they do not make a mobo with 2 x16 slot, what is the difference with running sli with x8/x8 vs x16/x16.
5. Is that power supply able to support an oc'ed cpu and gpu?
6. For my water cooling setup is a dual or single loop better? And if I go with a single loop what pump has enough power to push water through a triple rad, dual rad, maybe also a single, cpu block, chipset block and gpu(s) blocks?

I am interested in see the replys to this I am looking at some of the same equipment in an earlier post.

I can speak to the GPU I currently have the MSI N590GTX I love it no problems at all running any game. I am looking at the ASUS P8Z68-V pro gen3 mobo it says it has 2xPCIe slots but I think it is going to by 2 x8 = x16 config.
