5970 Motherboard Help!!

I just bought the Radeon 5970 for my rig im building for the holidays. This is my first built system and im just a little confused about PCI-E 3.0 and 2.0. Here are the motherboards im considering:

ASRock Z68 Extreme(3,4)

ASRock Fatal1ty Z68

Or what others you guys suggest.

I guess what im confused about is if i put my 5970 in a 2.0 slot since its a dual card will it only read at x8? or x16 since its 1 slot? Could someone help me just get a better understanding on what i should be looking for so i can figure out what board i need? Is 3.0 really necessary right now? Specs are below

CPU: i5 2500k Sandy
GPU: Diamond Radeon HD 5970 (Already Bought)
RAM: G. Skills Sniper Low Voltage 8gb (2 x 4gb) 1600
Case: Cooler Master 932 Advanced (Already Bought)
SSD: Samsung 830 Series 64gb (Already Bought)
CD: Blu Ray Burner
HDD: Samsung Spinpoint 1TB 7200rpm
Monitor: ASUS 24'' 1080p LED

When you put a single 5970 in either of those boards,it'll operate @ x16 speed;however, if you add another 5970,then they'll work at x8 speed.

What does PCI Express 2.0 @ x4 mean?

It means there is a PCI-E 2.0 slot which operates at x4 speeds.
In either of those motherboards,if you put the card in the first PCI-E slot,then it'll operate fully at x16 speeds
