I just got a Plantronics Gamecom 780 headset. Since it comes with its own audio driver, I wonder whether I should disable the onboard Realtek driver provided by MSI.

No, you do not need to disable the onboard. Just select the device as the Windows playback device.

No need to enable/disable drivers or devices.
