Found a case I like, but it only has one 3.5" bay but three 5.25" bays. I have a Zip drive, is there something I can rig to place it into the 5.25" bay?

Kinda silly, but I'd like it to work.

I believe there are mounting kits available for this.

Yes, get a drive bay converter. Retail boxed ZIP drives came with them! You can get them separately in a computer shop.
