I have the following specs

I5 2500K 3.3 ghz will be overclock
560TI SC SLI
16gb Ripjaws Ram
Gigabyte Mobo
Corsair Carbide 500R
Corsair H100 watercooler
2 HDD 1 SSD
5 case fans

I was considering the CORSAIR Professional Series HX750


Is going modular the way to go? any suggestions are welcomed

There are two schools of thought on modular. One says not to because of the (negligible) added impedance presented by the extra connection point. The other says that it makes for a cleaner finished build because you only need to connect the power cables you need; you don't have to 'hide' the unused ones. Personally, I prefer modular when I'm building other than a budget machine.

There is one other thing to take into consideration. Physical room. The added connectors at the PSU make for a slightly longer overall result. Normally that isn't an issue in any build other than a small case like in an HTPC build. In your case of course, that's not an issue.
