More about 2600k bridge gaming
  1. It really doesn't matter as Ivy bridge is just a die shrink of sandy bridge. You get about 10% better performance out of equivalent IB CPU compared to its earlier SB version.
My recommendation is for SB 2500k, or IB, 3570k
  2. Depends if you are going to overclock to the max, the performance difference is about 5% clock for clock with IB in the lead but SB over clocks higher and eats that up easy http://www.tomshardware.com/reviews/ivy-bridge-overclocking-core-i7-3770k,3198.html
Your editing and production leads me to belief you should go with an I7 again a question of overclock.
  3. Also add in you get access to USB 3.0 and PCI-e 3.0 too with the new Ivy Bridge.

Just wanted to let you know you dont need to go for IB to get usb3.0 as long as the mobo has an integrated controller, which most have (and had at the time of OP)
