Which motherboard?

I'm still new to the idea of building a rig from scratch but i wanted to give it a shot. I did a bit of research and had some advice but I'm still in need of some suggestions and reassurance that the components will function altogether.

So far this is what it looks like.

Intel Core I7-2700K 3.5Ghz 8MB Cache Quad-Core
Corsair H100
ASUS P8Z77-V PRO ATX Intel Motherboard
Avexir 1600Mhz quad-channel (4 x 8GB) AVD3U16001008G-4CI
Corsair Force Series GT CSSD-F240GBGT-BK 2.5" 240GB SATA III MLC Internal Solid State Drive (SSD)
12x LG UH12LS28 Blu-ray / 16x DVD+/-RW DVD Burner SATA Lightscribe w/Nero
EVGA Geforce GTX 680
Antec 1200 v3 case
Kingwin LAZER Gold Ultimate LZG-850 PSU
AFT PRO-55U All-in-one USB 2.0 Card Reader (Internal)

I'm planning on running this on 3 24" Asus vs series 1920x1080p monitors.

So my questions are:
Should i stick to the p8z77 because it's cheaper and has an array of features or should i swap it with a sabertooth z77? Which would be more suitable with this build?

Also, would the quad channel ram run on the dual channel motherboard? I read that it should work fine but I'm not sure if i should get 2x 16gb (8gb x 2) dual channel or a 32gb (8gb x 4) quad channel? Or is it the same?

Lastly, are there any other things i should be concerned about?

They are both good boards, I personally would stick with the pro for the price.
Quad channel only means 4 matching sticks they will run fine 2 and 2 in dual channel. What is the build for? For gaming 8GB is plenty 16GB and more would be for editing/rendering machine.
