1) Get a decent PSU. Cooler Master is pretty bad a lot of the time (not always). You really will only use 850W max with Crossfired 7950's or GTX 570's--probably 750W would do. So get an 850W Antec, Corsair, Seasonic, or XFX. If you're gonna trust the safety of your system to a PSU (and you have to), get a good one. I guess with water cooling or dual GTX 580's, you may use 950W. Check on that water cooling system's power usage.
2) Don't waste your money on a "superclocked" GPU. You can manually overclock it faster on your own and what's the point of all this cooling if you don't overclock yourself?
3) 3D Monitor. If you're spending $3K and gaming, w/ $500 on a standard HD resolution monitor, why not spend $150 more to get a 3D monitor & kit? Besides, that and multi-screen gaming is the only way to really use more than a single GTX 570 (outside of specifically Crysis 2 & BF3 on Ultra).
4) Upgrade to Kepler when it drops and sell me one of your GTX 570's.
