Will my HDD benefit from SATA 6?

I am currently planning my first build and I lack info about the differences and benefits of SATA 3 vs SATA 6. I plan on getting a 180GB - 240GB SSD for my OS, games, and programs. The SSD should obviously utilize SATA 6, but I also want to get two 1TB or larger HDD's in a RAID 1 configuration for music storage and school stuff. Is it necessary for the HDD's to be on SATA 6 (am I going to benefit from the SATA 6 as opposed to SATA 3?), because I am looking at maybe a $50 cut from the motherboard cost if I only need 2 x SATA 6 instead of 3 or 4 x SATA 6.

Also if I get the mobo with 4 x SATA 6....would it be smart / extra cool to put in another SSD in RAID 0 for a performance boost for my OS and programs / games and then also have the 2 HDD's in RAID 1 (for redundancy security), is that possible and what differences should I expect?
