Do I have to run HDMI on 1920x1080 resolution?

I am planning on hooking up my PC to a HDMI capable flat screen TV, but there is absolutely no way my computer will be able to run games in 1920x1080 resolution very well if at all. Can I choose a lower resolution so that the image/videos will be stretched out onto the entire TV? Because I've heard it will just make a black border around the end of the screen instead of stretch it, but I cant find a reliable source that confirms it.

I don't want HDMI for its 1080p, I want it because the TV is 2-3 times the size of my current 19 inch monitor and will replace my current TV as well(It will be my monitor and connected with cable to be my TV)
