Is this PSU enough, leaving the possibility for CF down the road?
For my Graphics card, should I buy the factory oc'd version or the normal 7850? They are both the same price.
Should I get a modular PSU or should I try to hide the cables behind the mobo tray?

That is more than enough for now, and should be able to handle 2x 7850's in the future.

Both. Antec isn't bad, but Corsair is widely regarded as one of the best, and it will not be sufficient for Crossfire.
