RAM: http://www.newegg.com/Product/Product.aspx?Item=N82E168...
APU: http://www.newegg.com/Product/Product.aspx?Item=N82E168...

Given all of the hardware, will the PSU fit or should I go for a mATX PSU?

It should. It's wide enough to fit that PSU, anyway.

Do yourself a favor and spent 7 bucks more on a Fractal Design Core 1000 case.

Yes, that will fit. It is a std dimension PSU. mATX cases like yours take std. PSUs.
Beauty is in the eye of the beholder and all that, but I have to agree with whatisthatnoise. If that Fractal Design case came in bottom mount PSU, Id consider it for my next budget build.
