AX1200 - Overkill or no?

I was planning on getting an AX850, but I recently also considered the AX1200.
Parts I'm getting:
Maximus V Formula
2xGTX 680s
At least 2 SSDs
At least 1 HDD
4 to 6 case fans.
Will the AX850 be enough to run all of this or should I get the AX1200?
Also, I read somewhere that raising the voltage while overclocking requires much more wattage... Is this true? Assuming heat was not a factor, how much might I be able to overclock my CPU with the AX850?

680s don't require an obscene amount of power unlike some of their predecessors(GTX 580s used ~250W each), guru3d had a GTX 680 SLI system that was only drawing 473 W from the wall at full load so an AX850 would definitely give you enough headroom for OCing even with some voltage increases on the CPU and the GPUs if necessary. The AX 1200 is excessive for just about every system, unless you are running 4 GTX 580s you won't come near needing that level of power.
