Parts Preferences: I'd like to stay Intel on the processor, but other than that I'm pretty open to suggestions

Overclocking: Perhaps in the future, contingent upon gaming demands

SLI or Crossfire: I'm open if it fits the budget, but I don't know much about running multiple cards

Monitor Resolution: 1920x1080

Additional Comments: Ideally, I'd like to play Eve Online, Skyrim, and other graphics-intense games with awesome visuals, highest possible if that's an option at my price range.

First of all, your setup looks pretty good!

Don't forget to buy an after market heatsink for your CPU, your motherboard and CPU are good for overclocking. If you don't plan on overclocking, the stock heatsink that comes with the CPU will be fine. However, if you don't plan on overclocking, you could cut back some on the motherboard and switch to a non "k" cpu.

Given your budget here, you could probably figure out a way to get a better graphics card in and still fit you budget. Certainly a 6870 and maybe a GTX 560ti.

Finally don't forget to think about what power supply you're getting, its an important part of the PC you don't want to skimp there.

I basically just reallocated funds put towards the previous motherboard to the video card, and went with the Gigabyte MoBo from your sig. Also noticed that I didn't have an OS, so included that too. Also changed the PSU, but the whole system at the moment is a bit pricey. Let me know your thoughts :D
