The answer is 7970. It's better than the 580, better for the price and uses far less power. It's generally a good idea to go for the new generation.
The 580 was the best high-end choice until the 7000 series came along, and the 590 was never a good option. It's always been too expensive for its performance.

At this point in time i would have to agree with the 7870 suggestion. I think the 590 along with the 7990 have been discontinued (??).

However if you have some time till you have to make that call, and since i can tell you would want to go with the nvidia way judging from your alternatives, you could wait a month or two and see what nvidia has to offer in terms of the next generation cards.
 
Yeah, the 590 and 6990 don't really seem to be available. They were basically just boasts.

You can wait as long as you want for the next big thing. Kepler isn't far away, but a month might be too long to wait. If not, sit tight, as there's always something better around the corner in the tech world.
