Thinking of dropping the Z68 for an H67 to save a little, since quick sync isn't really going to be useful and it won't be overclocked.

Any parts you want to suggest should be from a canadian site (newegg.ca, tigerdirect.ca, ncix.com, etc)

Mostly I'm just wondering for any SolidWorks pros out there if this is a good build for it.

If it won't be overclocked dropping to H67 won't save a little money. Because then you forfeit an x16 lane for dual video cards and if your ultimate goal is a 3 - 4 monitor - which would be ideal for a CAD setup - then that will be useless in the long run.

Where you'll save money is by dropping the HD - I would not pay the premiums for the Caviar Blacks right now - even though prices are slowly starting to drop back down to what they were last year we're still a long way off. If you're not going to be overclocking then drop to the 2600 and that will save some money.

If you're paying $1100 for a build I'd suggest things a bit differently:
