Which combo?

The Sabertooth X79 and an i7 3820 are avaliable for about £480
The Sabertooth Z77 and an i7 2700k are avaliable for about £360
The Sabertooth Z77 and an i7 3570k are avaliable for about £310

If im predominantly using the build for 2560 x 1440 high res gaming, which should i got for? Will it be cheaper in the long run to go for the X79 board for future upgrades?

Well, for Intel Core i7-3820 Sandy Bridge-E 3.6GHz u need x79 only= LGA 2011.

So the Z77 will not run with SB-E.

Do u use multiple GPU's?

If yes 3 or 4 x79 would be the way to go.

Yes. Games don't really use hyper trading, and that is all the difference.
